Cedar Grilling Planks
Cedar is characterized by a sweet-smoky-spicy aromatic. The spicy-smoke that cedar imparts makes it an excellent compliment to sweet sauces marinades or rubs. It can help to think "sugar and spice" when it comes to crafting your own flavorings with this wood.

Alder Grilling Planks
Very delicate with a hint of sweetness. Alder has a cleaner flavor that’s smoky, but not peppery, with hints of vanilla. It goes well with sauces that contain bacon or tomatoes.
Good with beef, fish, pork, poultry, and light-meat game birds. Traditionally used in the Pacific Northwest to smoke Salmon.

Maple Grilling Planks
Mildly smoky, somewhat sweet flavor. Good with pork, poultry, cheese, vegetables and small game birds. Soak in water for one hour. Coat in Olive Oil; place on indirect heat not over 350°F for the most effective use.
